Saying the full word would sound literal like referring to the actual church object where the Eucharist is kept.

It also softens the blasphemy. They do the same with another "swear" word, câlisse (calice).

Kind of like the F-word, It can express anger, surprise, admiration, or just be filler like "man" or "dude" in some contexts.

Whereas "Sacrebleu" is a bit old, not used since the 1960's but had the same function.
