I found the finger! This art list assigns Daniel Bourbonnais the (ultimately unused) left arm task with a thumbs up and a clenched fist. They were intended to play after kills (thumbs=wingman, fist=you). Thumbs is also still present in the game... fist became finger!

Zounds, this blew up. The middle finger is real! It's stored in Wing Commander's PILOTANM file but it isn't hooked up to anything. Probably an Easter egg they opted not to ship with. If I knew the joke would be so popular I would've recolored the sleeve to match the final game!
