With over 25 years of experience spanning luxury hotels, acclaimed restaurants, and international culinary destinations, Chef Jason brings a wealth of knowledge and passion to our kitchen. His career has taken him from Vancouver's award-winning Blue Water Cafe to the Caribbean shores of the British Virgin Islands, as well as prestigious properties including Fairmont Banff Springs, Fairmont Grand Del Mar, and Four Seasons Aviara.

Inspired by the abundance of the West Coast, Chef Jason describes his style as Pacific Northwest cuisine with a strong Mediterranean influence. He is passionate about sustainability, seasonality, and traditional culinary craftsmanship, taking pride in creating house-made specialties through curing, smoking, fermenting, pickling, and sausage-making.
