What you’ll need:
● 4 cod fillets (6 oz each)
● 2 tbsp @umbriangold Olive Oil, plus more for finishing
● 1 medium red onion, thinly sliced
● 3 cloves garlic, thinly sliced
● 1 jar (24 oz) @martonestreet Mediterranean Sauce
● ¾ cup black olives, pitted and roughly chopped
● 1 tbsp capers, drained
● ¼ tsp crushed red pepper flakes
● Kosher salt
● Freshly ground black pepper
● Lemon wedges, for serving

For the salad:
● 2 cups flat-leaf parsley leaves
● ¼ cup thinly sliced red onion
● 1 tbsp capers
● Zest of 1 lemon
● 2 tbsp @umbriangold Olive Oil
● 1 tbsp fresh lemon juice
● Pinch of kosher salt
● Freshly ground black pepper
