Human milk is a bioactive substance that improves the health outcomes of preterm infants. However, significant changes in the structure of milk lipids occur during storage, and more research is needed to evaluate how lipid oxidation may affect gastrointestinal health.
I will be investigating the relationship between lipid degradation and gastrointestinal health, thereby informing the design of optimal storage conditions for donor human milk administered to preterm and critically ill neonates.
