Excellent from @orlandomurrin but I’d add some more.

1) Salt won’t kill dried yeast.
2) Don’t use flour to thicken sauces. Use cornflour.
3) Alcohol evaporates whether you set light to it or not. Flambée is just performance.

There’s so many more canards. You could write a book.

@lennylaw Thanks for showing the full article, and we're in agreement! Do you use cornflour when making a roux? (If so, I must try it.) Agree about flambé being a performance, but it does add a touch of caramel flavour, don't you find?
