When it comes to thriving on a vegan diet, cabbage is one of the great cheat codes. Cabbage has everything going for it: it’s delicious, full of nutrients, and absurdly cheap. Nothing goes better with hummus, and a $2 head of cabbage can make at least 40 hummus sandwiches. Its crunchy texture takes everything to the next level.
