I just realized, there isn't even one fight in all of Avatar where Toph didn't completely outclass everyone she was up against, regardless of how many people she was fighting.
The only reason she lost against Aang the first time is because she didn't realize she was fighting an airbender, so he basically sucker punched her.

In the Kyoshi novels, Kyoshi does learn healing techniques from Water Tribe healers. But it wasn’t because she set out with the goal of “killing someone twice.”
The joke comes from her confrontation with Xu Ping An. After defeating him, she uses her knowledge of the body and healing to keep him alive long enough to ensure justice is carried out rather than letting him escape through death.
