@JSchuzer@Grabthebrisket Depends why you want to take it I suppose? No itโs not neccessary but often can give great insight to what goes on in the judging process and how it works. IMO I think that can be an advantage in competition.

3. Steady temps, 275-300 is my preference till done at 158-165 ish
4. Keep the smoke light. ๐

6. Depending on your cooker rotate for even cooking.
