Due to the abundance of sunshine and rain, long shoots already take too much energy away from the plant, so we cut off the far-reaching shoots. Thus, we encourage the trunk to devote its valuable energy to maturing the fruit rather than leaves and shoots during ripening.

Sweet 𝐬𝐳𝐚𝐦𝐨𝐫𝐨𝐝𝐧𝐢 is made by processing bunches of grapes containing both botrytised & healthy grapes. Maturation in wooden barrels for min. six months is a legal requirement. Increasing alcohol, sweetening, increasing/decreasing acidity & off-site bottling is banned.

Harvested grapes min. alcohol potential 16%, min. acidity 5g/l or min. residual sugar content 45 g/l. The wine's colour ranges from light golden yellow to deep golden yellow, and the aroma of botrytis grapes blends in with the ripening notes.

𝐄𝐠𝐲 𝐤𝐢𝐬 𝐟𝐮𝐫𝐦𝐢𝐧𝐭 2020 | Less sunlight, rhapsodic rainfall distribution, whimsical seasons is whar 2020 brought, causing the grapes to ripen slower. We used perfect, ripe fruit, so we postponed the harvest until we could pick perfect. #organicfarming
