@markgburdon 4h 30m in the summer. It was a bit colder today so I did it for just over 5h. It was 19.5 degrees in my kitchen and the dough was fermenting in the oven with the oven light on.
Free Hit failure.
Sourdough success.
Iโm getting consistently good results with my sourdough now. I was unhappy with my loaves in 2025, and then I realised that I was overproofing them, and now that Iโve reduced the bulk fermentation time by about 25%, they all come out like this.
They taste good too because I leave them in the fridge overnight between forming the loaves and cooking them ๐
Tomorrow will mostly involve forming sourdough loaves and forming my Free Hit team.
Saturday will mostly involve my loaves and Free Hit team cooking.

@FPLProp Thanks. Itโs very satisfying.
Itโs a bit annoying that I bought a quite expensive oven for my new house because it had a stream function which I thought would be great for sourdough baking, but it canโt be used for that function, and I can only cook one loaf at a time.
@mj_timm For my four-loaf batch I use:
200g wholemeal
120g starter (spelt and rye)
1371g strong white
990ml water
27g salt
I roll the loafs in oats, poppy seeds, flax seeds and semolina
@RoyalBlueFPL I never made my starter - someone gave me some two years ago and Iโve maintained it.
I leave it in fridge and never need to refresh it until I need to make more to cook a new batch - maybe once a month.
