Like many chefs, I started out washing dishes in a local pub kitchen and waiting tables. It didn’t take long to realise that I wanted to be a chef—the buzz, the teamwork, the energy—it was intoxicating.
As I worked in different kitchens, I knew I wanted to learn from the best and, one day, lead a Michelin-starred restaurant.
When we opened Moor Hall in March 2017, our goal was to create a world-class destination. The ambition to earn 3 MICHELIN Stars felt outrageous, that dream has become a reality.
I’m incredibly fortunate to have the support of my amazing partners, Andy & Tracey, my wife Jenn, and my family. And, of course, our unbelievably talented team—many of whom have been with us from day one. They are what makes Moor Hall what it is every single day.

At Blackthorn, the weather makes or breaks much of our day —especially the wind. Like many across the country, Malky got to know Bert pretty well on Tuesday.
We were relieved that it was only fierce winds, sparing heavy rainfall. Still, it kept us busy.

It takes around 5-8 days for the flakes to form, which allows us to capture approximately 6x more minerals and bark tannins - calcium for sweetness;
NaCl for saltiness; potassium for sourness; magnesium for bitterness; and earthy blackthorn branch tannins for umami effects.
