In both the book and the show, he's surrounded and outnumbered. He asks for an honorable death in single combat, but his enemies refuse to give him the ending he wants. Instead, they kill him from a distance, denying the King's Maker any final act of glory.

The point is the same in both versions: Criston Cole doesn't die as a celebrated warrior. He dies abruptly, without the heroic last stand he expected. So if his ending felt sudden in the show, that's because it closely follows how George R.R. Martin wrote it.
