And a blank spot (i.e. no drink) counts as a wildcard, so it automatically matches.

If you happen to stumble across a Breaking Bird with no drink or no side dish, then you're in luck! It will act as a wildcard, meaning it will default to whatever bird completes a set.
In short, it means these will act as a double bird (or greater).
