It's been an intense few weeks for Advanced Culinary students... they've been reviewing, studying, collaborating, & today used their Servsafe training to inspect the kitchen like a health inspector. Next week there will be a new crop of certified Food Managers here at Brandeis!
Advanced Culinary, in their proteins unit, learned about reverse sear and sous vide - we had some beautiful tri tip and choice NY strips! It was a good way to end the grading period π

1st place in single tier cake decorating!!! Congrats to Rory Avila, 11th grader, who made her cherry blossom cake look easy! All 4 girls worked so hard, I am so proud of their perseverance and dedication. Thanks @nisd_cte & @OCCulinaryArts for a great event!

Advanced Culinary had fun with a live crawfish boil today - one with Old Bay and one Cajun. P.S. crawfish can pinch, if provoked (no students were harmed in the making, instructor suffered minor pinching injuryπ). Our favorite sub Mr. Upson approved!
