Living our best summer life with this Saffron and Lobster Mushroom Risotto! Creamy arborio rice, saffron, pine nuts, lobster mushrooms, and zucchini. Paired with a petite arugula-frisee salad in a lemon vinaigrette makes for that perfect summertime dinner!
