People ask how I can make the analogy between Roman lead pipes and eating post agricultural plant based foods. Obviously processed foods and industrial farms with copious amounts of agrochemicals are much worse, but even small farms without all of the added chemicals, while much better, are still a problem as plants themselves still contain serious toxins that are harmful to health.
Can herbivores like sheep and cows eat any random plant, or will some cause harm or even kill them, like water hemlock or even different grasses like sorghum? All plants have natural toxins in them, it's just that some animals have defenses against some of those toxins. But, if they aren't designed to eat those plants, they won't have the defenses against those toxins, even if they are herbivores. Look at the traditional ways we cook and treat most plants, like soaking and boiling beans. That's to lower the toxic load and potentially increase bioavailability. If eaten raw or undercooked, even red kidney beans can put you in the hospital, or worse. Look up cassava root for instance. Cassava is the main calorie source for 750 million people in the tropics and contains a serious amount of cyanide that can kill if not treated properly. But even when treated it can cause long-term damage such as thyroid and neurological issues when eaten in low amounts over the years, as not all of the cyanide gets removed when treated.
Even sweet almonds have cyanide, and 40 to 50 per day eaten long term can cause these same problems. My brother's doctor once told him to eat at least 35 almonds each day to lower his cholesterol, without even a mention about potential cyanide buildup, as the doctor had no idea.
So that's why it's like the Roman lead pipes, because we are happily eating these things that can absolutely cause harm over time, and we are totally clueless about it. That's why I do this, in order to just make people aware that these things exist and to use caution. If you don't want to avoid all of them and go carnivore like I have that's totally your choice, but I at least want people to know about this stuff so that they can make an informed decision for themselves.
