@RadeeohRich @FoodNetworkCA @GuyFieri Keep meat moist and tender it needs to be smoked for long period of time to breakdown fat and collagen..but if you cook it too long it will start to dry out is why it's wrapped..you can do it unwrapped it will come down to your personal preference and heat or fire management
