We only have a few @CooleaCheese left from 2018 before moving onto those made in April 2019. The older cheeses tend to have more caramelised flavours and be denser and richer, while the younger cheeses will have a lightness to them and a marginally more supple texture.

Be still our hearts: Dexter Onglet with Spinach and Coolea. Coolea? Ah! It's a fantastic cow's milk cheese, not unlike a good Gouda, with nuttiness and caramel notes. When wuzzed with the spinach and heated through it is a glorious, melting, oozing delight. On dripping toast.
