My problem with the women’s football program is that there are no players from Nebraska on it. Compare that to the dominant women currently wrestling in high school in Nebraska.

I have to call that one a big miss.

Mullen, Nebraska sits in the middle of the Sandhills, a part of the state where cattle outnumber people by a huge margin.

Mullen itself has only around 500 residents. Hooker County, where it sits, has fewer than 1,000 people and tens of thousands of cattle. Ranching isn’t part of the tourism pitch here. It’s just everyday life.

The landscape is what makes this part of Nebraska different. The Sandhills cover a massive stretch of north-central Nebraska, with rolling grass-covered dunes, wetlands, cattle, windmills and roads that seem to disappear into the horizon.

Highway 2 runs through Mullen as part of the Sandhills Journey Scenic Byway, and the drive alone is worth the trip. There aren’t many towns, billboards or subdivisions breaking up the view. Just grass, fences, cattle and a lot of sky.

Mullen is one of the few places where you can stop for gas, grab something to eat and take a break before heading back out.

The town grew after the railroad came through in the 1880s and became the county seat of Hooker County soon after. It’s still the only incorporated town in the county.

But the real reason I’d want to spend time here is after dark.

There’s very little artificial light in this part of Nebraska, and the Sandhills have some of the darkest skies in the state. On a clear night, the Milky Way can stretch across the sky in a way most people never get to see at home.

No skyline. No glow from a nearby city. No streetlights running to the horizon.

Just darkness and a ridiculous amount of stars.

That’s what makes Mullen interesting.

You don’t come here because there are 20 attractions to check off a list. You come for the drive, the open land, the quiet and the chance to see what the night sky looks like when there’s almost nothing getting in the way.

Drive the Sandhills during the day. Stop in town for a while. Find a dark spot before nightfall and look up.

Nebraska has a lot of places people pass through on their way somewhere else.

Mullen is a good reason not to rush.

7% of the plant-forward group got out of prediabetes. 50% of the keto group did.

Washington University, published this week in Cell Metabolism.

55 adults randomised, 42 finished, every one of them carrying obesity, prediabetes and a fatty liver.

Ketogenic, Mediterranean, or the low-fat plant-forward diet your surgery would put you on tomorrow.

Four to five months.

They closed the escape hatch before they started. Every meal and every snack was cooked and supplied by the researchers. A dietitian saw each participant weekly. And the weight loss came out matched at about 10% in all three arms, so nobody gets to say this was just the weight coming off. The weight came off identically.

The only thing that differed was what the food was made of.

Liver fat, average reduction:

- Keto: 67%
- Mediterranean: 45%
- Plant-forward: 45%

Out of prediabetes by the end:

- Keto: 50%
- Mediterranean: 29%
- Plant-forward: 7%

The keto arm took 73% of its calories as fat and 4% as carbohydrate. Not a reduced-carbohydrate diet. 4%.

Britain and America have spent 40 years telling people with fat in their liver to cut the fat out of their food. The diet that cleared the most fat out of the most livers was the one made almost entirely of fat.

The plant-forward diet is the one on the poster in the waiting room. It came third, and it came third by a distance you could see from the car park.

RFK Jr. pointed at the colon cancer figures in young adults this week, and within about four hours the response had arranged itself into the same two instructions we have been issued since 1982. Eat less red meat. Eat more fibre.

Red meat has a scheduling problem. American beef consumption peaked in 1976 and has fallen by roughly a third since.

The generation now being diagnosed at thirty-five ate less of it than any generation of the last century, while early-onset colorectal cancer doubled in two decades.

A suspect who has been leaving town for fifty years, still in the dock, still not asked to explain himself.

Fibre did worse. They ran it properly, twice, in two countries, thousands of people, years of wheat bran and extra fruit and veg, watching for polyps.

The polyps came back at exactly the same rate as in the people eating none of it. Nobody withdrew the advice. Nobody ever does.

Then last year a team sequenced 981 tumours from eleven countries.

Certain E. coli strains make a toxin called colibactin, which snaps both strands of DNA and leaves a signature so distinctive you can read it off a tumour decades later. In patients diagnosed under forty it turns up 3.3 times more often than in patients over seventy.

And they could date it. The mutations were laid down in the first ten years of life.

So the damage that produces a tumour at thirty-five was done before that person was old enough to buy anything, choose anything or cook anything. Whatever they had for lunch last Tuesday is not in the frame and never was.

Colibactin is also pathetically short lived. It only works on contact.

The bacterium has to be physically pressed against the colon lining, and it cannot get there, because the inner mucus layer is a sterile exclusion zone that holds the entire microbiome at arm's length.

Something has to take that barrier down.

Carboxymethylcellulose. Polysorbate 80. Industrial detergents, filed under emulsifiers, because emulsifier sounds like something a chef does.

They are in the ice cream, the bread, the sauces, the protein bars and most of what gets handed to a child. Feed carboxymethylcellulose to healthy adults under supervision and you can watch their bacteria move in and take up residence against the wall.

The toxin is thousands of years old. The barrier it has to get through is the thing that changed, it is on the label, and everybody in this argument is busy discussing a steak.
