The only truly accurate way to depict classic hoplite warfare is to build a real life Truman Show-style experiment in the remote wilds of the Peloponnese. Create a handful of small city-states using technology, equipment, and customs from the mid-5th century BC (the golden age of the citizen-hoplite phalanx, right after the Persian Wars), populate them with people who have no knowledge of the modern world, and let the communities develop and fight it out naturally.
To do it properly, you'd start with around 1,000 babies raised entirely inside this closed system.
