Samlor Machu Ktiss (Cambodian Pork and Pumpkin Soup):
Ingredients:500g pork belly, diced
1 small pumpkin, peeled and diced
2 tomatoes, diced
1 onion, sliced
3 cloves garlic, minced
2 tablespoons fish sauce
1 tablespoon palm sugar (or brown sugar)
Salt and pepper to taste
Fresh herbs (cilantro or Thai basil) for garnish
Instructions:In a pot, sauté the minced garlic until fragrant.
Add the diced pork belly and cook until browned.
Add the sliced onion and diced tomatoes to the pot and cook until softened.
Add the diced pumpkin, fish sauce, palm sugar, salt, and pepper to the pot. Pour in enough water to cover the ingredients.
Bring to a boil, then reduce heat and simmer for about 30-40 minutes until the pork is tender and the pumpkin is cooked through.
Garnish with fresh herbs before serving.
Tuk Trey (Cambodian Dipping Sauce):
Ingredients:1/4 cup fish sauce
1/4 cup lime juice
2 tablespoons sugar
2 cloves garlic, minced
2-3 Thai bird's eye chilies, minced
1/4 cup water
Instructions:In a small bowl, combine fish sauce, lime juice, sugar, minced garlic, minced chilies, and water.
Stir until the sugar is dissolved and all ingredients are well combined.
Adjust the taste by adding more sugar or lime juice if desired.
Serve as a dipping sauce for grilled meats, spring rolls, or fresh vegetables.
Cá Nướng (Grilled Fish):
Ingredients:Whole fish (such as tilapia or snapper)
Lemongrass, garlic, chili
Fish sauce, sugar, lime
Fresh herbs: mint, cilantro
Instructions: Marinate the fish with lemongrass, garlic, chili, fish sauce, sugar, and lime. Grill until the fish is cooked and serve with fresh herbs.
Cá Kho Tộ (Braised Fish in Clay Pot):
Ingredients:500g catfish or snakehead fish
Fish sauce, sugar, black pepper, garlic, shallots
Caramel sauce (optional)
Garnish: green onions, cilantro
Instructions: Marinate fish with fish sauce, sugar, pepper, garlic, and shallots. Braise in a clay pot with caramel sauce until the fish is cooked through.
Chicken Pho:
Ingredients:500g chicken bones
500g rice noodles (pho noodles)
Spices: ginger, onions, pepper, fish sauce, salt, sugar
Fresh herbs: green onions, cilantro, bean sprouts
Instructions: Simmer chicken bones with spices to make the broth. Cook rice noodles separately. Serve noodles in a bowl, pour hot broth over, and add fresh herbs.
Fried Rice
Ingredients:
Cooked rice, vegetables (such as peas, carrots, and corn), eggs, soy sauce, and green onions.
Instructions:
Stir-fry cooked rice with vegetables, eggs, soy sauce, and green onions until well combined.
Baked Salmon with Lemon and Dill:
Ingredients:
4 salmon fillets
Salt and pepper to taste
2 tablespoons olive oil
2 tablespoons fresh dill, chopped
Zest and juice of 1 lemon
Lemon slices for garnish
Instructions:
Preheat the oven to 375°F (190°C).
Place salmon fillets on a baking sheet.
Season with salt, pepper, and drizzle with olive oil.
Sprinkle chopped dill and lemon zest over the fillets.
Squeeze lemon juice over the top.
