With cooking Spray, put 1 tortilla in pan and spread tomato sauce, mozz, garlic and oregano Put 2nd tortilla over that and crisp bottom tortilla for 10 min at medium. Flip tortillas and spread tomato sauce, cooked eggplant, cheese, garlic and oregano.
Bake at 350 for 15 min.

Today's inspiration, Eggplant Parmesan Quesadilla.

Cut eggplant into half circles and cover with olive oil, garlic and Italian seasonings. Then bake at 450 degrees for 20 minutes. Sprinkle with bread crumbs for last 5 minutes.

Cover with other tortilla,
Mix meat mix with Baja sauce
Spread over top tortilla, sprinkle with cheese.
(I had Fiesta mix, but cheddar is fine)
Slide tortilla into oven pan and heat at 350 for 15 minutes. Serve.
I put more Baja sauce on top to add more flavor.

Playing around today.
Baja beef-adilla.
Cut 10" tortilla in half.
Cook 1/2 lb gr beef and sliced zucchini
Mix 2oz cream cheese, 2oz mozzarella and spinach
Remove meat and spread cheese mix over half tortilla and put in pan to just heat up.
Cover with other tortilla,
