But fortification is a band-aid for a broken food system. Three billion people can't access real, nutrient-dense foods—so we add synthetic vitamins to processed foods and call it a solution.
Our new preprint shows even optimal fortification can't replace whole foods.
We need both: fortification as safety net + rebuilding food systems that prioritize nutrient-dense animal and plant foods over ultra-processed foods.
