Homemade Soft Pretzels

Recipe Ingredients

For the Dough:
4 cups all-purpose flour
1 ½ cups warm water
1 TBS sugar
2 tsp salt
4 TBS butter, melted
2.5 tsp instant yeast

For the Baking Soda Water Bath:
2.5 qts water
2/3 cup baking soda

For the Topping:
Egg wash (1 egg, scrambled)
Pretzel salt or coarse sea salt

Instructions

Make the Dough:
Mix the warm water, sugar, and instant yeast in a large bowl. Add the flour, salt, and melted butter. Knead until a smooth dough forms, then let it rest or rise as preferred. Divide and shape into 6 pretzels.

Prepare the Bath:
Bring the 2.5 quarts of water and 2/3 cup of baking soda to a rolling boil in a large pot.

Boil the Pretzels:
Drop each shaped pretzel into the boiling water bath for 30 seconds.

Remove with a slotted spatula and place onto a lined baking sheet.

First Bake:
Brush the pretzels with the first layer of scrambled egg wash. Bake at 450°F for 6 minutes.

Second Bake:
Remove from the oven. Apply a second layer of egg wash and sprinkle generously with the coarse sea salt. Return to the oven and bake for an additional 6 minutes until golden brown.
