Who wants some perogies and cabbage rolls? One perogy is farmer's cheese, the other is cabbage and bacon. The cabbage rolls are stuffed with turkey. It was a hearty cold weather meal!
I shredded the leftovers from my smoked chicken, and make an enchilada casserole! It uses a green enchilada sauce made from tomatillos from my garden. I couldn't find any oaxaca cheese, so I used mozzarella. #Cooking#dinner
Spatchcocked a chicken and smoked it. I also did an overnight brine, and the chicken came out super juicy and flavor packed. It was a fun smoke, would do again.
I took some heads of cabbage from my garden and made cabbage rolls! I do this every year to fill out the freezer with easy meals. Just reheat a pan and serve.
I took a couple of squash fritters and made what I call "fritter eggs benedict". Super yummy, imagine an eggs benedict served over hash browns. Would eat again.
My trip to Italy inspired me to make a Bolognese sauce. Unlike a typical Ragu sauce, Bolognese starts with a sofrito of carrot, celery, and onion. It's one I'll definitely be making again.
