If you think hashing is the same as encrypting, then you didn't understand the diagram you sent.
Hashing isn't reversible; it loses data, so decryption isn't possible.
Mining isn't just 'guessing,' but for the analogy, it works. In real life, miners ‘guess’ random nonces for hashing, so it's still essentially a guess.
