Char Siu wild pork. Deboned ham and marinated overnight. Cooked 20 minutes per side. Let rest and carve. Like boneless ribs from a Chinese joint

A favorite of mine - Bang Bang Gator Tail Tacos. Marinate the gator in buttermilk and franks red hot overnight. Batter with corn starch and fry at 375. Mix mayo, sriracha, and sweet chili sauce for the bang bang sauce.
