Signing messages with physical wallets is kinda tricky, some of them don't support it or the library solana-wallet-adapter itself doesn't have it implemented. There's a fix which could potentially fix it (https://t.co/r60cxbyIvT). My best bet for now would be to use a Browser/Software wallet (Phantom, Solflare, Backpack, etc.)
