This past year has brought up a lot of questions and concerns about harvesting market animals at home. Today we offered some training to NE Extension Educators to help these conversations continue to move forward #SteakScience

Traditionally, beef fat is a bright white color. Grass has a high level of beta-carotene which can give fat from grass fed beef a more yellow color. This isn’t a bad thing, but a cool example of how management/lifestyle can impact the final product

Tenderness plays an important role in offering a consistently good eating experience to consumers. If someone buys steaks that turn out to be tender and flavorful, they will likely purchase them again. If they have a bad eating experience, they may not return to that product
In the research world, tenderness is commonly measured using Warner Bratzler Shear Force. This test measures how much force it takes to “bite” through the steak. This, combined with taste panels, help find ways to improve the overall eating experience for consumers #SteakScience
Now, I’m a Youth Meats Extension Educator at UNL. In this role I develop youth programs to make meat science a career students seek out, not one they accidentally stumble into. It’s a great career path with endless opportunities (and the samples are a major perk) #SteakScience
