Today we have 16 drying platforms full of #cacao of our varieties: O’Payo & O’Tuma organic & Tenor. These cacaos will be on platforms for about 6-7 days. We have a bright sun, but we expect short rains.

A thin cacao layer dries faster than a thick one. But fast-drying doesn't mean it's a good process. A good process depends on what flavor intensity we want for the beans. If it is needed for the drying process to last more, we cover the beans with a tent. #cacao#chocolate
