Honestly, here in Texas, I've always been told to cut it in the late afternoon. One because it's much cooler to work outside, but also so the sun/ heat doesn't dry out your grass after being fresh cut during the day. Not sure if that's actually true or not, but it definitely isn't as hot. That's why you also water around this time.
