Cajun Chicken and Broccoli Alfredo
🧂 Ingredients
For the Chicken & Broccoli
2 chicken breasts, cut into strips
2 tablespoons Cajun seasoning
1 tablespoon olive oil
2 cups broccoli floretsBroccoli
For the Alfredo Sauce
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
1/4 cup chicken broth (optional, for thinning the sauce)
Salt and pepper, to taste
For the Pasta
8 ounces fettuccine pasta
👩🍳 Directions
1️⃣ Season the Chicken
Place the chicken strips in a bowl and sprinkle the Cajun seasoning over them.
Use your hands or a spoon to thoroughly coat the chicken so every piece is covered with the smoky, spicy blend.

2️⃣ Cook the Chicken
Heat 1 tablespoon of olive oil in a large skillet over medium heat.
Once hot, add the seasoned chicken strips in an even layer so they brown nicely.
Cook for 5–7 minutes, stirring occasionally, until the chicken is fully cooked and no longer pink inside.
The Cajun seasoning will darken and create a flavorful crust on the chicken.
Remove the cooked chicken from the skillet and set aside.
3️⃣ Cook the Broccoli
Using the same skillet (don’t wash it — those browned bits add flavor!), add the broccoli florets.
Pour in a small splash of water and cover the skillet with a lid.
Let the broccoli steam for 3–4 minutes, just until bright green and tender-crisp.

Remove and set aside with the chicken.
4️⃣ Cook the Fettuccine
Bring a pot of salted water to a boil.
Cook the fettuccine according to package directions until it reaches al dente tenderness.
Drain and set aside, reserving a little pasta water if you want to enrich the sauce later.
5️⃣ Make the Alfredo Sauce
Back to the skillet again:
Melt a little butter or use the pan juices, then add the minced garlic.
Cook for about 30 seconds until fragrant—avoid browning the garlic.
Pour in the heavy cream and bring to a gentle simmer.
Reduce heat and stir in the Parmesan cheese.
As the cheese melts, the sauce will thicken into a smooth, creamy Alfredo.

6️⃣ Combine Everything
Return the cooked chicken strips and the steamed broccoli to the skillet.
Gently toss to coat them with the creamy Alfredo sauce, ensuring the chicken stays juicy and the broccoli stays intact.
Let everything simmer together for 1–2 minutes, allowing the flavors to blend beautifully.

No oven. No baking. This is the cheesecake that used to be served at Woolworth lunch counters and people have been making it at home ever since.
FAMOUS WOOLWORTH ICE-BOX CHEESECAKE 🍋
- Lemon Jell-O (3 oz)
- Boiling water (1 cup)
- Cream cheese (8 oz)
- Sugar (1 cup)
- Lemon juice (4 Tbsp)
- Evaporated milk (12 oz)
- Graham crackers (1½ cups)
- Butter, melted (⅓ cup)
Dissolve Jell-O in boiling water. Let cool to room temperature. Beat cream cheese, sugar and lemon juice until smooth. Whip the well-chilled evaporated milk in a separate bowl until fluffy. Fold cream cheese mixture into whipped milk, then fold in cooled Jell-O. Press graham cracker crust into a 9x13 dish. Pour filling over crust. Refrigerate at least 4 hours or overnight.
Light, creamy, lemon all the way through. Slices clean right out of the dish.
