For a comprehensive look at Spanish cooking, I love “Spain — The Cookbook” by Simone and Inés Ortega. This is my well-tabbed and well-used copy. It helped inspire some of the dishes in my novel “Finding Hemingway!”

Skinnytaste spiced chicken with garlic yogurt sauce! Marinate chicken in olive oil, lemon juice, garlic, cumin, smoked paprika, turmeric, curry powder, cinnamon, red pepper flakes, salt, and pepper. Grill and top with parsley. Sauce: Greek yogurt, lemon juice, garlic, and salt.
