Boli with Groundnut (Roasted Plantain)
A classic Nigerian street-food snack: smoky roasted plantain (boli/bole) paired with roasted groundnuts.
Simple, satisfying, and full of flavour.
Ingredients (serves 4–6)
• 4–6 ripe but firm plantains (yellow with a few black spots)
• Pinch of salt (optional)
• Light brush of oil (optional)
• Roasted unsalted groundnuts (peanuts), for serving
• Optional: spicy pepper sauce or roasted fish
Preparation
1Wash the plantains. Leave the skin on for traditional charcoal roasting, or peel them. Optionally soak briefly in salted water.
2Roast over a charcoal grill, turning often, until the outside is nicely charred in spots and the inside is soft and caramelised (15–30 minutes).
Alternatives: Oven-roast at 200°C/400°F on a rack or baking sheet (flip halfway, 30–40 minutes), or use an electric grill/air fryer.
3Serve hot (peel if needed) with a handful of roasted groundnuts. Add a sprinkle of salt or ground pepper, and optional pepper sauce or fish.
