The Eucharist was instituted by Christ long before the New Testament canon was settled.

The Church existed before there was a universally recognized New Testament canon.

Sacred Tradition and the Church’s teaching authority preserved the faith and recognized the canon.

So treating the Bible as the highest authority apart from the Church that preserved and recognized its canon gets the order backwards.

And if I must choose between the Bible and the Eucharist?

I choose the Eucharist.

Because the Bible is the inspired Word of God, but the Eucharist is the Word made flesh, Jesus Christ Himself.
