We'll keep seeing more appchains/app-specific rollup as the reason to build them remains valid for builders who:
• Wish to have their own dedicated blockspace (no need to compete for blockspace with other dApps) in turn high throughput and lower latency.
• Easier Customizability (Custom Gas fees, Choose any DA Layer to offset cost, Sovereignty, etc)
• Own economic incentives.
In as much as there are valid reasons to build your appchains, there are several cons as well, which include:
• Security Guarantee
• Bridging risk
• Composability
For that of Composability, Nodekit is already setting a pace to solving that.
There are also several reasons in which appchain builders experience due to its complexity.
From my research and discussion with several teams and projects, this includes:
• Teams find it difficult to choose the right stack/framework for their appchain.
• On the other hand, RaaS makes it easier to deploy a rollup/appchain like deploying smart contracts in a matter of minutes.
Rollup/appchain builders find it difficult to choose the right RaaS for their needs
Today, we have several RaaS providers with different functionalities and supports in toolings, etc
Only @gelatonetwork supports AA implementation in their services, some RaaS have multiple supports for Infra than the rest, like Wallets, Oracles, RPC Endpoints etc
Also, some RaaS providers use old version of some stack codebase.
Aevo Rollup migration is a good case scenario which proves that.

Watch project like @sovereignxyz which aims to solve this problem by building a marketplace to connect Rollup/appchain builders to the right Infra.
