My preservation process for fresh derica tomatoes and pepper mix:
-The tomatoes are neatly washed and grinded after which I boil them on fire till every water in it dries up to form a tick paste making sure it doesn't burn.
-Wash the bottles and set them aside to dry up.
-Allow the tomatoes to cool for some hours then bottle them.
-After bottling, I put them in a pot then add some water to half the level of the bottles in the pot.
This helps to make the bottles air tight after boiling them in water.
-The bottles containing the paste is allowed to boil then given an additional 10 to 15mins to boil again after which they are removed from the hot water and set aside to cool.
-After cooling, they are shelved or packed in a carton and then are ready for use.
Using this method, your tomatoes remain fresh and can last you for a year or more but I use mine for just 1 year till the next derica season.
You can give this a trial.
