What's happening there isn't that pineapple skin is some magical heat-proof material, but rather a cool physics trick called the Leidenfrost effect. When that red-hot steel bowl, probably around 1,000°C (1,832°F), hits the fresh pineapple skin, the intense heat instantly vaporizes the water in the rind. That water turns into a thin layer of steam between the hot steel and the pineapple, acting like a temporary shield. The steam slows down the heat transfer, so the skin doesn't burn right away-it just sits there looking surprisingly unbothered until the steel cools down.

The pineapple rind itself isn't inherently resistant to high heat. It's mostly water, cellulose, and some tough fibers, and under normal conditions, it'd char or burn at much lower temperatures-like 250-300°C (482-572°F). But in this case, the extreme heat works against itself: the steam layer keeps the hot surface from making direct contact long enough to do serious damage. You'd see a different story if the steel stayed hot or if the pineapple were dry-then it'd toast pretty quick.
It's a neat demo, but not something unique to pineapples-other wet, fibrous stuff like watermelon rind can pull off the same trick. Ever seen water droplets dance on a hot skillet? Same principle.
