The majority of the colour and tannin in a red comes from the skin of the grape, so hand plunging the skins back down into the vats ensures that as much as possible is infused into the wine - as demonstrated here with a small ferment of our shiraz.

The unique location of our vineyard, at 350 metres above sea level, is set in between Mount Langi Ghiran and Mount Cole, allowing our 50-year-old vines to produce some of the finest cool-climate grapes in the world.
