Simming is like doing a practice final/past final before the actual final, you get the general idea of the mechanic but some nuances can still only be experienced in the actual game. 3rd party plugins (i.e. cactbot) are more like your friend whispering you the test answers

Not being able to practice mechanics is not part of a fight’s intended difficulty.

Using sims to practice said mechanics is not equivalent to erasing the difficulty the same way a third party plugin does.

Not being able to practice mechanics is a part of a fight's intended difficulty, when they put some really hard mechanic deep into a fight, they fully understand what they're doing
