This batch was made on the 18th of February. It’s a 2 day curd.
It is gorgeous and buttery with a lovely yoghurt lactic tang. The rind offers yummy button mushroom notes.

Brie: one of the best cheeses in the World, however many have told me they find Brie bland, tasteless and overrated. If you're one of these people, I would guess that you haven't tried a nice Brie!
Most Bries you find on supermarket shelves are stabilised Bries.
A stabilised Brie will never mature, will have a mild flavour and a consistent texture throughout. Theses are (in my opinion) poor quality and I never bother eating them.
If you want to try a nice Brie which is well priced and found in nearly all large supermarkets, try Brie de Meaux!
Brie de Meaux has an AOP (Appellation d'Origine Protégée), which is the French equivalent of the British (PDO) Protected Designation of Origin. This means that this cheese has strict guidelines on how and where it can be made, ensuring quality.
Brie de Meaux is a raw milk cheese (isn't pasteurised) so shouldn't be eaten if you're pregnant.
You'll find as this Brie ripens, it becomes extra gooey and the edible rind starts to change colour with a mottled brown hue. The rind should be eaten and you'll find this cheese has a depth of flavour that makes it one of the most popular cheeses in the World.
If you want to try a British version of Brie de Meaux, the only British Brie made in the same style (but is parturised) is Baron Bigod!
Baron Bigod just won Best British Cheese Brand in the Fine Food Digest Best Brands survey, for the second year in a row.
BB is probably in my top 20 cheeses in the World and is made by Fen Farm Dairy. (cheese in the photo is a Brie de Meaux from Asda).
