Probably the most Japanese-style convention I've been to into the US is @TouhouFest . I don't have much connection to Touhou, but it's absolutely worth it if you're into doujin culture in general.

I played the demo for the PC-98 inspired "if you stay"! It was cute! The art is incredible & the world/story have me intrigued about the challenges the cast will face in the full game. It's made mostly by 1 dev & I think their passion, sincerity, & hard work really shine through!
