beekeepers give the bees a great hive and a predator-free area for bees to live in, that gives them way more time than in the wild to make honey, and the excess honey would've rotten over the winter, so taking it doesn't hurt them at all.

The honey what beekeepers "steal" from bees, would've ben uneaten over the winter and left to rot, because unlike in the wild, the bees in beekeepers's hives have great housing and don't have to fend off any predators, thus making way more honey.
@feelgoodagain Wild, thus getting many excess honey that would get unused and rot after the winter, which is why beekeepers taking it doesn't hurt them in the slightest.

Also there's pvz hybrid which had a similar idea and existed way before either games.
