Just a quiet release tonight, no changes but I thought I'd tag v1.0 of Saloon 👀

It's changed and morphed quite a bit throughout v0.0 but I am really happy with this as the first version. I have also decided to keep PHP 8.0 as the minimum with the view of v2 being 8.1 miniumum.
