Super simple, quick & healthy dinner!
Gently pan-fry the salmon with a little oil and the lid on. Thinly slice fennel, dress with apple cider vinegar, salt & pepper. Steam cauliflower then mix with fresh lemon juice, a spoon of sour cream, seeded mustard, salt, pepper & parsley. Steam some rice and serve everything hot.
Finished it off with pickled ginger and seaweed on the side.

Beef Meatballs with Roasted Eggplant, Leek & Pine Nuts Family Meal Prep (makes ~20–25 meatballs • serves 6–8 for the whole week)
Ingredients
500g beef mince (ground beef)
2 eggplants, roasted
1 leek, sautéed
½ cup pine nuts, toasted
6 eggs
2 tablespoons sour cream
1–2 tsp ground cumin
1–2 tsp ground turmeric
½–1 tsp cayenne pepper (adjust to taste)
¾–1 cup panko breadcrumbs (add more if needed)
¼ cup fresh parsley, finely chopped
Salt & black pepper, to taste
Olive oil (for roasting & sautéing, ~3–4 tbsp)
Method
In a large bowl combine beef mince + roasted eggplant + sautéed leek + pine nuts + 6 eggs + sour cream + cumin + turmeric + cayenne + panko breadcrumbs + parsley + salt & pepper. Mix well. Add extra breadcrumbs if too wet.
Shape: Roll into golf-ball sized meatballs (20–25 total).
Cook: pan-fry.
Meal prep: Cool completely. Portion into containers.
