@SeamusHughes It's not easy to read the court documents you post on my phone and usually all you post is "oh" so although I think you're probably posting something interesting, all too often I don't bother. I wish there was an easy way to transform the quoted text into a more readable form.
Wholly Guacamole has no preservatives in it and it sits in the case for weeks. Here is how.
The ingredient list is Hass avocados, distilled vinegar, and under 2% water, jalapeno peppers, salt, dehydrated onion and granulated garlic.
The vinegar is there for more than flavor. It pulls the pH down low enough that bacterial spores can't grow, and that matters because pressure doesn't kill spores. Then the sealed package goes into a vessel full of water and the water gets pressurized to a level their own site describes as putting it at the bottom of the ocean. Because the pressure comes from every direction at once, the food is not crushed, just squeezed evenly. At that pressure the proteins inside bacteria and yeast unfold and stop working, so the product gets pasteurized without ever being heated.
Heat ruins fresh food. It turns avocado bitter and it cooks the fresh out of juice. Pressure kills the same bacteria and leaves the color and the flavor alone.
It's called high pressure processing or HPP. A lot of the refrigerated guacamole in the case gets it, and so does cold pressed juice and a lot of the deli meat that says no preservatives on the front.

I accidentally booked every single 7:30pm table at a restaurant because my wife wanted pasta.
The place releases reservations exactly 14 days in advance and they disappear in seconds.
After losing three Fridays in a row, I wrote a script.
At 9:00 AM it refreshed the booking page and grabbed the first available table for two.
Unfortunately, the restaurant's API returned success before it marked the table unavailable.
My script sent 12 requests in 1.8 seconds.
I got 12 confirmation emails.
The restaurant called and asked why “Howard” needed 24 tables.
I said it looked like a concurrency issue.
They did not know what that meant.
I canceled 11 reservations and kept the best table.
The manager asked me to stop using automated software.
I agreed.
Then he gave me his direct number so I could text him instead.
We have eaten there five times since.
My wife thinks I am extremely good at reservations.
Technically I attacked OpenTable and the maitre d' fears me.
@JonBbC_TechGeek Unless the map data is perfect where you drive, it's tough to have any streak at all. It seems to take a year or two for Tesla to update the maps for traffic revisions.
@mikepat711 I actually opened a Tesla service request to rotate tires for the first time in my life. The mobile service tech showed up and said nope, not needed. No charge. Apparently if you drive on enough freeway ramps the curvature corrects the uneven wear so no rotation is needed.
