How Cooking Demonstrations Are Improving Nutrition Among Children and Mothers in Kanungu District, @BwindiHospital
In Kanungu District, malnutrition remains a significant public health challenge affecting the growth, development, and wellbeing of children and mothers. Through community-based nutrition interventions, Bwindi Community Hospital is using cooking demonstrations as a practical and effective strategy to improve dietary practices, promote healthy feeding behaviors, and increase the use of locally available nutritious foods.
Cooking demonstrations go beyond teaching people how to prepare meals. They provide hands-on nutrition education that empowers mothers, fathers, caregivers, and community members with the knowledge and skills needed to prepare balanced, affordable, and culturally acceptable meals. By using foods readily available in Kanungu—such as matooke, beans, groundnuts, millet, silverfish (mukene), eggs, pumpkin, sweet potatoes, leafy vegetables, and seasonal fruits—families learn that good nutrition does not always require expensive foods.
For children under five years, the demonstrations emphasize the preparation of nutrient-dense complementary foods after six months of exclusive breastfeeding. Caregivers are shown how to combine carbohydrates, proteins, healthy fats, and vitamin-rich vegetables into one meal that supports growth and brain development. These practical sessions have helped improve meal diversity, appropriate food consistency, feeding frequency, and hygiene during food preparation, reducing the risk of undernutrition and recurrent childhood illnesses.
Pregnant and breastfeeding mothers also benefit greatly from the program. During demonstrations, nutritionists educate women on the increased nutritional requirements during pregnancy and lactation, highlighting the importance of iron, folate, calcium, protein, and vitamin A. Mothers learn how to prepare meals that support healthy pregnancy outcomes, improve breast milk quality, and reduce the risk of maternal anemia. The sessions also encourage adequate hydration and healthy cooking methods that preserve nutrients.
A unique strength of the Bwindi Community Hospital approach is its participatory nature. Instead of classroom lectures alone, participants cook together, taste the meals, ask questions, and share indigenous recipes that can be improved nutritionally. This builds confidence and increases the likelihood that families will adopt the practices at home. Community Village Health Teams (VHTs) further reinforce these messages during household visits, ensuring continuous behavior change beyond the demonstration sites.
The program has also strengthened household food security by promoting kitchen gardens and the utilization of diverse food groups throughout the year. Families are encouraged to grow vegetables such as nakati, dodo, sukuma wiki, cabbage, and amaranth alongside fruits and legumes, making nutritious foods more accessible even in low-income households.
As a result, many caregivers report improved child appetite, better weight gain, increased consumption of vegetables, and greater confidence in preparing balanced meals using local ingredients. These positive dietary changes contribute to improved nutrition status, healthier pregnancies, and stronger child growth within the communities served by @BwindiHospital
