Say what you want, but a fried bologna sandwich is mountain gold. 🥪

You cut a couple little slits around the edge so it would not dome up in the pan, dropped it in a hot cast iron skillet, and let it fry till the edges curled up and got brown and crispy. Slapped it on soft white bread with a little mustard or mayo, and maybe a slice of tomato if the garden was giving. 🍅

It was cheap, it was fast, and it fed a hungry family without a fuss. Round steak of the mountains, some folks called it, said with a grin and not a bit of shame. A whole lot of us grew up on it and still crave it on a lazy afternoon.

Are you a mustard or a mayo person on your fried bologna, because folks have gone to war over less?
