Broil chicken first 120*C w/ garlic cloves & rosemary, then at 220*C for few mins. Wash potatoes, boil 120*C in pure goose fat for 50 mins.

Devein scampis, marinate for 10 mins before frying. Preheat pan & fry 2 mins on flesh side, 1 min on shell side. Cook pasta, drain, add sauce, stir & add scampis.

Set cheese on plate for min 5-10 mins to drain. Sprinkle Burrata cheese w/ Maldon salt or Fleur de sel then add dressing. Serve tomatoes at room temp, not cold.
